Our hearts of palm pasta dish incorporates a snappy, delicious, and creamy keto carbonara made with eggs, parmesan cheese, bacon, and garlic. Blanketed over a bed of keto-friendly hearts of palm pasta, it is then sprinkled with more parmesan cheese and a dash of parsley.

After you give our keto hearts of palm carbonara a try, feel free to experiment with your new favorite keto pasta. Toss hearts of palm in a mouthwatering savory ragu or creamy pesto. Keep it light with a vegan-style dish, blending hearts of palm with your favorite keto-friendly veggies.
Drain and rinse your hearts of palm. Slice the hearts of palm into the same length as noodles. Then peel and mince the garlic. Set aside.
In a medium bowl, whisk the eggs until the yolks and whites are blended. Add the parmesan cheese, salt, and pepper to taste. Set aside.
Dice the bacon into bite-sized pieces. In a saute pan, over medium heat, fry the bacon until desired doneness. Turn the heat to low, and remove bacon to a paper towel-line plate reserving the bacon grease.
Add the sliced hearts of palm and the minced garlic to the saute pan with the bacon grease. Stir to coat.
Pour in the egg mixture, continuously stirring. The egg mixture will warm and become creamy. However, if you stop stirring, you risk the eggs scrambling, losing that delicate creamy texture. If you notice your eggs are beginning to scramble while you're stirring, immediately remove the pan from the heat. Your dish is complete when the egg mixture thickens and resembles a cream sauce. Stir in your bacon, sprinkle with extra parmesan cheese and top with parsley. Serve immediately. Enjoy!
